The Craft Series presents ‘Pulutan’ by Chef Mikko Reyes and Erwan Heussaff

The Craft Series
The Craft Series is a night of creative, fun, and exciting eat & drink event every Thursday at Niner Ichi Nana wherein the food and cocktails are specially prepared by Chef Mikko Reyes and Erwan Heussaff. They surprise the customers with very unusual yet very interesting dishes and drinks in line with the theme for that night.
Last Thursday’s theme was Pulutan. Four different pika-pika (food) and four panulak (drink) were served. Here’s what Chef Mikko and Erwann prepared for us:
The Craft Series - Legit Sisig
LEGIT SISIG (PHP249.00)
What’s an inuman without our favorite sisig? This favorite Pinoy delicacy was made with a pig face, liver, brain, onion, chili, and calamansi.
The Craft Series - Tokwa't Baboy
TOKWA’T BABOY (PHP198.00)
It may seem like an ordinary tokwa’t baboy but this one’s definitely a must-try! Whenever I order tokwa’t baboy, I usually eat just the meat because I’m not a big fan of tokwa. But the tofu croquettes in this dish, with perfect texture that’s crispy outside and creamy inside, left me no choice but to eat everything! Partnered with crispy tenga ng baboy and soy vinegar foam, this dish just made it my fave dish of all four!
The Craft Series - Sizzling Foie and Shrooms
SIZZLING FOIE AND SHROOMS (PHP386.00)
This lovely dish is kind of new to me. I love how it incorporates foie and mushrooms with a la pobre gravy, pickles, and pan de sal croutons.
The Craft Series - Oyster Sinuglaw
OYSTER SINUGLAW (PHP277.00)
Sinuglaw is a combination of two cooking techniques: sinugba (Cebuano term for grilled) and kinilaw, which is a method of cooking fish in vinegar and spices. To add a twist to the dish, Chef used raw oysters, which I really love! This just got me more excited to try it and it didn’t fail me. With grilled pork belly, oysters, siling labuyo, shallots, and cane vinegar, this dish looked pretty easy to prepare.
Now, for the Panulak, since I’m not a drinker, I only got to try 2 drinks.
The Craft Series - Three in One
THREE IN ONE (PHP390.00)
What made me order this? It has coffee! I love coffee so this is the first drink I tried. This drink has Hennessy VS, Cold Press coffee, condensed milk, Mole Bitters, Vanilla Tincture, and egg white. Not sure of its contents but this drink reminds me of Bailey’s and mudslide.
The Craft Series - Traitor Tetra
TRAITOR TETRA (PHP350.00)
Okay. So the next drink I got was the Traitor Tetra. The ingredient that made me wanna try it? Mango Puree. I just love how the drink was presented. Basically, they mixed the drink first and put it back in a tetra pack placed inside a jar full of ice. Excited to try it, I punched in the straw and took a mouthful sip. Man, I forgot it’s an alcoholic beverage!!! It tastes real good but, damn, it really is a traitor! Got tipsy after a few more sips. Now, I know why it’s called as such. Traitor Tetra is a mixture of Bourbon, Jerry Thomas Bitters, mango puree, orange juice, orgeat, and lime juice.
And here are the two other drinks that, unfortunately, I didn’t get to try:
POM BEFORE PROM (PHP330.00)
     Bombay Sapphire, pomelo shrub, elderflower, mint laves, and Simple syrup.
HAPPY HORSE (PHP310.00)
     Bacardi, house pineapple lemon soda, cointreau, and Paulaner
